A few years ago, when I started this blog, one of my first posts was about frou-frou summertime drinks, and how to make fancy margaritas. The recipe was simple: get a fancy-schmancy flavor of kids drink mix like Kool-Aid, make the recipe to your level of sweetness, and add tequila and ice. (Or rum and ice if you want a daiquiri.)

Yum. And simple. (Just don’t let the kids drink the wrong Kool-Aid.)

So this year, I’m sharing another summah-time cooler recipe that I’ve come to rely on–and the best part is that it’s low-cal. Very low cal.

I take a shot or two of flavored vodka (my preference is Absolut’s Ruby Red Grapefruit), then I add no- or low-calorie sweetner (I like SunCrystals) to taste, ice, sparkling water, and a smidge of tonic water (diet). Very light, very fresh, very low-cal.

    Right off the bat I have to say that if you are not a fan of green apple flavored whatever then this might not be the drink for you. My version of an Apple-tini is:

    Smirnoff Vodka
    DeKuyper Sour Apple Pucker schnapps
    Apple Juice

    I use a cough medicine cup (because it is convenient) and measure out 3 parts apple juice to two parts sour apple and two parts vodka and then I play around with it depending on how ‘alcoholly’ I want it to taste (which usually isn’t much).

    It is sickly sweet and I love it. Like a liquid green apple jolly rancher that will give you a quick buzz.

    Ooh! I love summer drinks! This summer I’m all about Mango Mimosas (mango nectar and sparkling wine) and Passion Fruit Punch (passion fruit nectar and amaretto with passion fruit seeds to garnish). Soooo yummy!

    I am in love with St. Germain this year. A splash of it is great in champagne, but mostly I just add it to club soda for a very refreshing, not too high in calorie treat.

    (The National Drink of Cuba)

    1 1/2oz. Light Rum
    1 oz. Lime Juice
    1 tsp. Super Fine Sugar
    3-4 Mint Leaves
    Club Soda

    Combine lime juice, mint and sugar in a Collins or highball glass.
    Stir gently to bruise the mint.
    Fill glass 3/4 with ice.
    Add the rum.
    Top with soda. Stir well. Enjoy!
